Tteokbokki is a popular Korean street-food dish known for its chewy rice cakes coated in a bold, spicy sauce. The combination of soft rice cakes, savory seasonings, and gentle sweetness creates a satisfying meal or snack that is especially enjoyable when served hot.
Although it may look complicated, the dish is manageable to prepare at home with a few key ingredients and a single pan.
Ingredients
Korean chili paste gives the sauce depth, while chili flakes allow you to adjust its heat. Preparation takes about 10 minutes, and cooking takes 15–20 minutes. You will need:
- 400 g Korean cylindrical rice cakes
- 3 cups water or vegetable stock
- 2 tbsp Korean chili paste
- 1–2 tsp Korean chili flakes, to taste
- 1 tbsp soy sauce
- 1 tbsp sugar
- 2 garlic cloves, finely minced
- 2 spring onions, sliced
- 1 tsp sesame oil
- 1 tsp sesame seeds, optional
This makes 2 to 3 servings.
How to Cook Tteokbokki
The sauce is mixed first, then everything cooks together in one wide pan. Follow these steps:
1. Prepare the rice cakes. Check the package directions. When using refrigerated or frozen rice cakes that feel firm, soak them in warm water for about 10–15 minutes, or as directed on the packaging. Drain before cooking.
2. Mix the sauce. In a small bowl, combine the Korean chili paste, chili flakes, soy sauce, sugar, and minced garlic. Stir until the ingredients form a smooth mixture.
3. Heat the liquid. Pour the water or vegetable stock into a wide frying pan or shallow saucepan. Bring it to a gentle boil over medium-high heat.
4. Add the seasonings. Stir the prepared sauce into the hot liquid until it dissolves evenly. Lower the heat slightly and allow the mixture to simmer for two minutes.
5. Cook the rice cakes. Add the drained rice cakes and stir gently to coat them. Simmer for approximately 8–12 minutes, stirring regularly so they do not stick to the bottom of the pan.
6. Check the sauce. As the liquid reduces, it should become thicker and coat the rice cakes. Add a small splash of water when the sauce thickens too quickly or the rice cakes need more time to soften.
7. Finish the dish. Stir in the sliced spring onions and sesame oil. Taste the sauce and adjust the sweetness or heat if necessary.
8. Serve immediately. Transfer the rice cakes to serving bowls and sprinkle with sesame seeds. Enjoy while warm, when the rice cakes are still soft and chewy.
Tips for a Chewy Texture
Rice cakes can become firm when cold, so preparing them according to their packaging helps them cook evenly. Avoid boiling them aggressively for too long, as they may become overly soft or stick together.
Keep the sauce at a steady simmer and stir occasionally. The mixture thickens as water evaporates, so watch the pan closely near the end. A little extra water can loosen the sauce without requiring more seasoning.
For a milder version, reduce the chili flakes and use less chili paste. For a sweeter finish, add a small amount of sugar at a time. Taste as you go rather than making large adjustments all at once.
Serving Ideas and Storage
Tteokbokki can be enjoyed as a snack or as part of a larger meal. Serve it with sliced cucumber, steamed vegetables, or a simple bowl of rice to balance the bold sauce. A few extra spring onions also add freshness and color.
The dish is best eaten soon after cooking because the rice cakes continue absorbing moisture as they sit. Refrigerate leftovers promptly in a covered container and use them within a few days.
The chili paste and chili flakes set the heat of the dish, so note the amounts that suited you, and the next batch will taste right from the start.
