When dinner needs to feel special without requiring hours in the kitchen, Tuscan butter gnocchi is a delicious option. Soft potato dumplings are coated in a creamy garlic sauce with juicy tomatoes, tender spinach, and a generous sprinkle of Parmesan.
Each ingredient adds something different, from the richness of the sauce to the freshness of the vegetables. The result is a comforting skillet meal that comes together with simple steps and makes an appealing choice for a busy weeknight or a relaxed dinner at home.

What Makes This Gnocchi Special?

Gnocchi are small, soft dumplings commonly made with potatoes and flour. Their tender texture makes them ideal for creamy sauces because they collect flavor in every bite. Store-bought gnocchi can make this recipe especially convenient, saving the time needed to prepare dumplings from scratch.
The sauce is the heart of the dish. Butter and garlic create a savory starting point, while cream gives the mixture a smooth consistency. Tomatoes add a gentle tang and bursts of sweetness, helping balance the richness. Fresh spinach brings color and softens quickly when stirred into the warm sauce. Parmesan adds a salty, savory finish that brings the ingredients together.

Preparation and Cooking Time

Preparation time: 10 minutes
Cooking time: 20 minutes
Total time: Approximately 30 minutes
Servings: 4

Ingredients

1 pound potato gnocchi
2 tablespoons unsalted butter
3 garlic cloves, minced
1 cup cherry tomatoes, halved
1 cup heavy cream
½ cup vegetable broth
½ cup grated Parmesan cheese
3 cups fresh baby spinach
1 teaspoon Italian seasoning
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper
1 tablespoon olive oil
2 tablespoons chopped fresh basil

Instructions

1. Cook the gnocchi. Bring a water to a boil and cook the gnocchi according to the package directions. Drain well and set aside.
2. Prepare the pan. Heat the olive oil in a large skillet over medium heat. Add the butter and let it melt, stirring gently so it does not brown too quickly.
3. Cook the garlic. Add the minced garlic and stir for about 30 seconds, just until fragrant. Avoid letting it become dark, as burnt garlic can give the sauce a bitter flavor.
4. Soften the tomatoes. Add the halved cherry tomatoes and cook for 3–4 minutes, stirring occasionally, until they begin to soften and release some juice.
5. Make the creamy sauce. Pour in the vegetable broth and heavy cream. Stir in the Italian seasoning, salt, and black pepper. Allow the mixture to simmer gently for 3–5 minutes.
6. Add the cheese. Sprinkle in the grated Parmesan and stir until it melts into the sauce. Keep the heat moderate to help the sauce remain smooth.
7. Wilt the spinach. Add the baby spinach in handfuls, stirring until the leaves soften and fit into the sauce.
8. Combine with gnocchi. Add the cooked gnocchi to the skillet and toss gently until the dumplings are coated. Simmer for another 2–3 minutes so the flavors can blend. If the sauce becomes too thick, add a small splash of vegetable broth.
9. Finish and serve. Taste and adjust the seasoning as needed. Scatter the fresh basil over the top and serve while warm.

Tips for a Smooth, Flavorful Sauce

Use gentle heat after adding the cream and cheese. A vigorous boil can make a cream-based sauce less smooth, so keep the mixture at a light simmer. Stirring regularly also helps prevent the sauce from sticking to the bottom of the pan. Freshly grated Parmesan generally melts more evenly than coarsely grated cheese. Add it gradually and stir as it melts. If the finished sauce is thicker than expected, a little broth can loosen it without overwhelming the other flavors.
For extra vegetables, sliced mushrooms or diced bell peppers can be cooked with the tomatoes. If fresh basil is unavailable, a smaller amount of dried basil can work, although fresh herbs provide a brighter finish.

Serving and Storage Suggestions

Serve Tuscan butter gnocchi on its own for a filling meal or pair it with a crisp green salad and toasted bread. The creamy sauce is best enjoyed shortly after cooking, when the dumplings are tender and the spinach retains its fresh color. If there are leftovers, place them in an airtight container and refrigerate for up to three days.
Tuscan butter gnocchi combines soft potato dumplings, creamy garlic sauce, tomatoes, spinach, and Parmesan in one easy skillet meal. Its appeal comes from the balance of rich and fresh flavors, along with a preparation method that is manageable even on a busy evening. Keep the heat gentle, season to taste, and serve it warm for a satisfying dinner that feels comforting without being complicated.
